Fleming’s is your slightly-above-average corporate-expense-account chain steakhouse, owned by the parent company that brings you PF Chang’s. Traveling executives have come to know and trust it, ordering the same thing every time at every location, knowing there won’t be any deal-spoiling surprises. This, ultimately, is what chains really provide us with: consistency nationwide. Service varies, but when you get the trusted “Fleming’s Potatoes” or Chili’s “Awesome Blossom,” you know exactly what you’re going to get.
The space is elegant and classy, with large, comfortable booths and a nice bar area. A few sides here are out of the steakhouse norm: chipotle cheddar macaroni and cheese, potatoes with jalapeños and cheddar cheese. They unabashedly hit all the pleasure points (and caloric RDAs). There’s an effort to market Fleming’s as a serious wine place, which is specious given that there few legitimate wines on the list. Grill your server about the freshness of flights—they’re a well-known way to get rid of long-open wines.
As for steak, it’s decent, standard USDA Prime, and wet-aged. They’ll season and cook it expertly, and you’ll hardly be likely to complain. After all, if the point of chains like this is for you to know exactly what you are getting into…how could you?
