Korean and Hawaiian favorites treated like Mexican street snacks—Marination Mobile is mostly successful at a strange type of fusion.
The best offering is a quesadilla with zingy kimchi, salty, smoky pork, and cheese that holds two slightly crunchy tortillas together. There are a lot of textures in the mix, but it’s not overloaded with too many strong flavors.
There are at least four varieties of cheapo tacos. Kalbi beef is the best one: the meat is tender and garlicky and topped with crispy sweet slaw. The worst is tofu, which fails to absorb enough of the vaunted marinade to taste like anything but tofu in a tortilla.
And for better or worse, there’s a Spam slider, which tastes like, well, Spam. It’s surprisingly good for what it is—nicely grilled, piled with kimchi and pulled pork, and encased in a sweet Hawaiian roll—and anyone hankering for a real island tradition will be happy.
