Vintage tasted 2007 Grapes Cabernet Sauvignon

Overview Don Sebastiani adheres to a philosophy of consistency, in which vintage variations are reduced and a distinct brand character is preserved from year to year. While we vigorously disagree with that idea—we hold with the terroirists who believe that wine should be a reflection of the land and the season—we can’t deny that this approach can still produce some thoroughly enjoyable wine. The task is made easier by the fact that Don Sebastiani is a negociant: rather than growing their own grapes, the winemakers buy grapes from different areas and blend them, enabling them to more easily adjust a wine’s character.

Nose It has distinct vegetal aromas, as well as dense black fruit.

Mouth Our blind tasters had mixed feelings about the mouth, which they found very tannic and vegetal.
