Order the chicken fried steak. Its brittle, peppery shell seems at one with the thin shard of beef inside, thanks to the restaurant’s insistence on pan-frying. The traditional white gravy both deepens and tempers that meat and pepper sensation. Many people rightly consider this the best example of Texas’ staple meal, at least in Dallas.

Unfortunately, the rest of Allgood’s menu is more of a roller coaster, with some tolerable dishes and a few falling sadly off target. This eclectic Deep Ellum roadhouse—with Austin-esque yearnings (“It’s like going to Austin without having to pass through Waco”)—does serve a hefty breakfast for nightlife musicians (and others) that vibe the place on many evenings. Hardly any of that matters though because the chicken fried steak is such a delicious certainty.
